Welcome to the resources to help you prepare for your food & beverage course at the Riverside College Centre of Excellence in Hospitality. We are very much looking forward to seeing you at enrolment and for you to start your course with us in September.
The course covers the following skills:
- Working in the hospitality industry
- Menu design
- Food service of food & drinks
- Food safety
- Knowledge of beverages
- Barista training
In these preparation resources, you will be completing some tasks to provide you with a wider understanding of the skills that you will be studying with us.
Exciting news: You will get opportunities during the academic year to have work experience at Chester races for the May Festival and Butlins Holiday resort in Bognor Regis working in a range of restaurants on their complex as soon as government guidelines allow.

We have put together a few tasks that will help you when you start your course. Some of the information you collect now can be used to support your first weeks in Scholars
Please read the tasks on the following pages and complete as much as you can.
Being front of house staff, our client’s dietary requirements are very important to us. We must understand which products and foods can cause allergic reactions in all foods we serve.
Can you research what foods are allergenic and that we need to tell customers about, by law. Write down your findings.
The first week in college you will be learning all the correct cutlery and crockery that we use in our amazing restaurant.

Whilst you will look at the art of making cocktails in the restaurant, thought you might like to have a good at home with some lovely non-alcoholic iced teas.
And please take photos of your creations if you can.
