Welcome to the resources to help you prepare for your catering course at the Riverside College Centre of Excellence in Hospitality. We are very much looking forward to seeing you at enrolment and for you to start your course with us in September.
The course covers the following skills:
- Working in the hospitality industry
- Food safety
- Food service of food & drinks
- Preparing bread & dough products
- Knowledge of cooking dishes
- knife skills
- Healthy eating
In these preparation resources, you will be completing some tasks to provide you with a wider understanding of the skills that you will be studying with us.
Exciting news: You will get opportunities during the academic year to have work experience at Chester races May festival and Butlins in Bognor Regis, working within their vast range of restaurants in both kitchens or front of house as soon as government guidelines allow.

We have put together a few tasks that will help you when you start your course. Some of the information you collect now can be used to support your first weeks in college.
Please read the tasks on the following pages and complete as much as you can
Being a chef, our client’s dietary requirements are very important to us, and therefore we must understand which allergenic products are in all foods we serve. Can you research what foods can cause allergies, and we need to let our customers know about (it is the law)?
Write down your findings.
The first week in college, you will be learning all the correct cutlery and crockery that we use

Within your first few weeks in college, you will be making a range of breads and bread rolls for the restaurant.

While you are at college, you be using a range of flours for different products. Can you research and write down what products can be made with the following different flours?
What products can be made from:
- Strong flour
- Self – raising
- Any others?
